I spent some time putting together a few breakfasts for my Keto diet. I think a lot of people find breakfast on this diet to be easy but I am not a huge fan of eggs so I definitely find it more challe
nging. Part of my preparation was eggs. I made scrambled eggs and added bacon as well as mushrooms to some of the eggs. It ended up being two eggs per serving and approximately two slices of bacon. When I added mushrooms, it was roughly one mushroom, sliced. I also didn't let any of the bacon drippings go to waste. I cooked the bacon in batches and in between each batch I did a few servings of eggs. The mushrooms received the same treatment. These containers are now safely in my freezer waiting for a day for me to be interested in eggs. I will likely also have either cheddar or mozzarella cheese on hand in case I want some cheese.

The other breakfast I made was fake oatmeal. Oatmeal is my normal breakfast and I eat it with cocoa powder, Ovaltine and peanut butter which makes it taste great without adding a ton of sugar. But Keto says no oatmeal so I had to be inventive. I looked at a few different recipes online and then made it my own. For the base, each serving has:
2 Tbsp hemp seeds
1 tsp ground flax seed
1 tsp chia seeds
0.5 Tbsp ground almonds
1 Tbsp of unsweetened coconut
0.25 cup coconut milk
pinch of salt (which you can omit if you're concerned about your sodium intake)
small amount of Stevia sweetener
I then added some flavoring. I made a pumpkin pie flavor with 2 Tbsp of pureed pumpkin, a few pecans and some pumpkin pie spice. The next flavor was chocolate peanut butter raspberry. This one had 1 Tbsp of cocoa, 1 Tbsp of peanut butter and some frozen raspberries. Then I did a raspberry cheesecake and a raspberry chocolate cheesecake. These ones had 0.5 Tbsp of full fat cream cheese, frozen raspberries and the chocolate one had 1 Tbsp of cocoa powder. All flavors were shaken and then put in the freezer. I didn't taste as I went so I will report back in on how this turned out as far as taste and texture.

The next food I will be preparing are fat bombs. I plan on doing three flavors for this one as well - cheesecake, Bounty bar, and chocolate peanut butter. All three are classic flavor pairings in my eyes so hopefully it goes well. I'll have more pictures soon.
